Okra Fritters

Okra was just coming on at the Whitesburg Farmers Market while we were there. For this recipe, seek out the smallest okra you can. And don’t be deterred by okra’s mucilaginous quality; it’s the secret ingredient to successful fritters!

Ingredients

2 cups thinly sliced okra
⅔ cup minced onion
2 eggs, lightly beaten
3 tablespoons flour
½ teaspoon salt
½ cup cornmeal
½ teaspoon Tabasco or other hot sauce 
1 tablespoon heavy cream

 

Directions

Toss okra with minced onion
Add remaining ingredients and mix well

Heat ½ inch vegetable oil in a heavy skillet. Drop batter in by tablespoonfuls. Fry until golden brown on both sides. Drain on a rack or paper towels and keep warm. Repeat until all batter is used.
