Sorghum Popcorn
Ingredients
4 quarts popped popcorn (about ½-1 cup unpopped corn)
½ cup sorghum molasses
1 cup white sugar
1 tablespoon white vinegar
pinch of baking soda
2 tablespoons butter (plus more as needed to grease your hands)
1/2 tablespoon vanilla
Directions
Pop corn without any butter, oil or seasonings & add to your largest bowl.
In a 3-quart saucepan stir sorghum, sugar, vinegar, and soda together and bring to a boil
Boil without stirring until it forms a hardball in cold water or comes to the temperature of 250℉ on a candy thermometer. Be patient and vigilant. Take off heat. Add vanilla and butter and combine well. Warning — mixture may hiss and bubble when you add these.
Slowly pour boiled mixture over popcorn stirring with rubber spatula. Butter your hands then shape into baseball-sized balls or spread out on parchment paper for sorghum caramel corn! Wrap popcorn balls individually in waxed paper or parchment paper.
