Gnat’s Muffins

also known as “Gnat’s Healthy but Still Really Good Muffins”
Ingredients
1 cup flour
1 cup oats
1 T baking powder
¼ cup dry milk powder
1 tsp cinnamon
½ tsp nutmeg
¼ tsp salt
1 cup fruit (diced apples, strawberries, blueberries, etc)
¾ cup apple juice concentrate, thawed (the kind you find in the freezer section in a cardboard tube)
¼ cup oil
1 egg
Directions
Mix dry and wet ingredients separately then together. Divide batter in 12 paper lined muffin tins. Bake at 400* for 18-20 minutes.
Note — these are not sweet muffins. All the sweetness comes from apple juice concentrate and that liquid is balanced by using dry milk powder. Also minimal on perishable items so these can be made at any time!
